The menu charts an exciting spice trail through provinces such as Hunan, Yunnan, Sichuan, Xingjiang, Nanjing, Jiangxi and Guangxi, drawing on the rich food traditions and heritage of each region. Aromatic and fragrant, the menus are a melting pot of robust flavours, including heady spices and dried, fresh, salted, pickled, brined and fermented chillies, and careful techniques, such as stir frying, tea smoking, dumpling mastery, steaming and pickling, creating an extraordinary culinary marriage and a unique dining experience.
